Between the new spots worth checking out and a weekend lineup that feels more like a resort itinerary than a regular Saturday, I am constantly reminded why I love this area and why so many people are making it home.
Here is a look at what is buzzing across Castle Rock, Castle Pines, Parker, and Lone Tree right now.
New Spots Worth Putting on Your Radar
The dining scene here keeps leveling up, and a few recent openings are worth noting.
The Brinkerhoff just opened in Castle Rock at the Promenade at Castle Rock center on Promenade Parkway, and it is already turning heads. From the team behind La Loma and Sierra Restaurant in Lone Tree, this upscale spot brings serious culinary credentials to our backyard. There is also an adjoining event space called Bar Hummingbird, which spans over 9,000 square feet of beautifully designed space. If you have been waiting for a true date-night or special-occasion restaurant that does not require a trip to Denver, this is it.
Also new in Castle Rock is Starbird Chicken, a fast-casual concept with a crave-worthy menu of sandwiches, tenders, and wings. Great for a quick and satisfying weeknight dinner.
Over in Parker, Playa Bowls has opened at The Juniper, bringing acai bowls, smoothies, and tropical-inspired flavors to the area. It is the kind of spot you start visiting on Saturday mornings and never stop. And if you have not yet discovered Perfect Blend Parker, it is a welcoming neighborhood coffee shop with breakfast, mocktails, and cocktails that has quickly become a community favorite.
And while it is still a couple of years out, Douglas County’s third Costco is slated to open in Castle Rock by 2027, so the area is only continuing to grow in ways that make daily life more convenient.
What to Do This Weekend
If you are looking to get out and enjoy the season, this weekend is stacked.
Sip & Savor is happening next Friday, June 27, at the Philip S. Miller Park Amphitheater in Castle Rock. This event brings together wine and bourbon tastings, artisan vendors, food trucks, and live music in one of the most beautiful outdoor settings in the county. It is 21 and over, so grab your person, bring a lawn chair, and make a night of it.
Also happening now through summer at the Outlets at Castle Rock, the Rock the Mountain Summer Weekend Concert Series features free outdoor performances, including indie and rock acts like Opal Grove. It is the kind of low-key local evening that reminds you why you moved somewhere like this in the first place.
If you are more of an outdoors enthusiast, this is a great weekend to take on Challenge Hill at Philip S. Miller Park. The 200-step climb rises 178 feet in elevation and delivers a view that genuinely stops you in your tracks. The 300-acre park also has eight miles of trails, so there is plenty to explore before or after.
Lone Tree residents have a free pool day at Cook Creek Pool coming up as well, and Castle Pines residents can take advantage of a day out at Rueter-Hess Reservoir at no cost. Two great ways to enjoy summer without spending a dime.
